Valerie Bertinelli’s All-in-One Breakfast Smoothie is the ultimate grab-and-go meal
The Valerie’s Home Cooking host posted this smoothie recipe on her website, saying it’s her favorite choice for those mornings when she doesn’t have time to sit down for breakfast.
The recipe serves two and “packs a nutritious punch” with ripe, peeled, frozen bananas, ice, unsweetened almond milk, cold-brew coffee, uncooked oats, honey, almond butter, chocolate-covered espresso beans, coconut oil, vanilla extract, and if you like, mint sprigs.
“This is the perfect breakfast for when I’m in a hurry,” she said. “I add all the ingredients, blend, and it’s ready in minutes. But the fresh, healthy way it tastes and jump-starts my energy level at the same time is the real luxury. It’s also efficient.”

Bertinelli’s Cherry-Coconut Scuffins brings together 2 beloved baked goods
The culinary personality explained in her cookbook (by the same as her cooking show) how her baked treats got their unusual name.
“Before the first season of my cooking show, I was in the Food Network test kitchen, trying to invent a recipe,” Bertinelli wrote. “I had in mind something that was both healthy and decadent. … A woman I admire said, ‘Not quite a muffin. But so good!’ Another chef said, ‘It tastes like a scone, but kind of like a muffin, too.’ Suddenly I lit up. ‘Oh, it’s a scuffin!’ And so the scuffin was born. They are so darn cute.”

Bertinelli’s Eggs Benedict recipe simplifies hollandaise sauce
With deli ham, eggs, white wine, lemon juice, unsalted butter, whole-wheat 100-calorie English muffins, and chives, Bertinelli’s spin on this classic dish is filling and flavorful.
Traditional Eggs Benedict calls for hollandaise sauce, which can be tricky to make, but here the former One Day at a Time star opts for a just-as-delicious creamy sauce that fits the bill.
In her recipe, while the eggs are poaching, the wine and lemon juice are mixed in a separate pan and brought to a boil. Lower the heat and whisk in the butter; remove from the heat and season.
The poached eggs are served open-faced on the English muffins, with the rich dressing drizzled over them.
